Corn Roast 2015 Big Success

The Berlin Boat Club annual Corn Roast was a big hit again, bringing people in by boat from as far as Oshkosh and Omro.  Campers came and filled the campground at Riverside Park.  And, Berlin businesses and residents all joined together to support the only fundraiser of the year.

Friday night activities started off with the spirit of a boat party theme.  Food, raffle items, beer stand, and of course corn along with DJ Sonny for entertainment.

Saturdays schedule of events included of course…..Sweet Corn….All Hands on Deck, Chalk drawing contest, the Chicken Wing Contest, special guests Mad Dog and Merrill, WISS/WAUH Radio Remote, the Rope Pull Off and Johnnie Diamond/Kids program with Karaoke Contest.

Chicken Wing Contest

Sauce:

1 Tablespoon Minced garlic

1 T soy sauce

¼ cup garlic Hoisin sauce

2 t minced ginger or to taste

1 T rice wine vinegar

2 t Asian sesame oil

1 T peanut butter

Zest ½ lime and juice of ½ lime

1 t garlic powder

Drizzle of garlic siracha sauce

 

Wings:

Chicken wings cut into flats and drummies

Peanut powder

Oil: Peanut oil

Garnish:

Green onions sliced (white and greens)

Toasted sesame seeds (brown)

Black sesame seeds

Zest of lime (very last step)

 

Place sauce ingredients in a bowl and heat until peanut butter melts into sauce. Set aside.

Pat wings dry. Deep fry in peanut oil for 4 minutes at 300 degrees or until an instant read thermometer reads 165 degrees inside the wing.

Drain on paper towels. Place in a sealed container with peanut powder and shake until coated.

Deep fry a second time for 2-4 minutes at 300 degrees until golden brown.

Toss in sauce and add garnish. Wings really make it when you place lime zest as the very last step.
